I wish I could take credit for this one, but I have to give it to my sister in law, Jenn.
While I tend to go the simple route and dress my salad with a good quality olive oil and sea salt, I have been absolutely LOVING the tangy taste of this dijon mustard dressing. The best part is that its super easy to make and uses only TWO ingredients.
To be honest, I don't even measure it out, just kinda eye ball it. But here is how you can make it.
Ingredients:
1 tablespoon Dijon Mustard. I prefer Primal Kitchen as they use super simple ingredients. Make sure your Dijon mustard does not have any seed oils or sugar added to it as those will make this dressing an inflammatory one.
3 tablespoons extra virgin olive oil. Always check that your olive oil is COLD PRESSED
In a small bowl, whisk together the ingredients. Pour over your salad, use as a marinade, or as a condiment in your sandwich. I LOVE my little whisk that I purchased on Amazon
Here is WHY it works so well:
A dressing usually requires a fat and an acid, plus any herbs, spices, flavoring. Dijon mustard already has vinegar and spices! So all you have to do is add some oil to it.
