Pantry Meals: Salmon Cakes


My pantry is my toolbox for health. On those days when my refrigerator is empty (not that often, but it does happen), I know I can always create something healthy and delicious straight from my pantry.


One of my favorite recipes is my Salmon Cakes. Not only do they ONLY require pantry ingredients, but they are delicious, healthy and super easy to make.


I also love that you can serve these up in so many different ways. You can eat them on an English muffin, over a salad, on their own, or even turn them into little cakes as a quick appetizer. The possibilities are endless.


Ingredients

2 6oz can of salmon, drained (I like Wild Planet)

1 flax egg (1 tablespoon ground flax + 3 tablespoons water)*

½ cup bread crumbs (I like Longeve Protein Crumbs )

1 tsp onion powder

1 tsp garlic powder

¼ cup good quality mayo (I use Primal Kitchen)

1 ½ tsp dijon mustard (I use Primal Kitchen)

Salt and pepper to taste


Instructions:

  1. Preheat the oven to 400. Line a baking sheet with parchment paper and spray with olive oil spray.

  2. Prepare the flax egg. Mix 1 tablespoon ground flax with 3 tablespoons of water. Set aside for 10 minutes.

  3. Combine the 2 cans of salmon, flax egg, bread crumbs, onion powder, garlic powder, dijon mustard, mayo and salt and pepper. Mix well.

  4. Divide mixture into four portions and form into patties

  5. Place patties on the prepared sheet tray and spray with a little olive oil on top.

  6. Bake for 25 minutes

  7. Enjoy


Ways to serve:

  1. On toasted bread, bun or english muffin (as pictured)

  2. Over a salad

  3. As a side or snack



*can use a real egg if preferred
